Savory Monday–Jump Up Rice

I learned this dish several years ago when dating a guy from Guyana.  His mother was an awesome cook and she made this amazing rice dish called Cook Up Rice.

She taught me how to make it but since there are some things I could find only in West Indian grocery stores I decided to alter the recipe for ease.  And I changed the name.  The original used a salted big tail that’s been boiled down and then you use the boiling liquid instead of stock; so I use stock :)  It also uses coconut cream.  I couldn’t find it so I used coconut milk.  Here we go!

Recipe: Jump up Rice

  • 1 cup split peas (green or yellow)
  • 1 cup basmati rice
  • 2 cloves garlic
  • 2 tbls olive oil
  • 2 tomatoes chopped
  • 1 can coconut milk
  • 1 cup chicken stock
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Add peas to bowl and completely cover in water and let sit for 2 hours or overnight.  Drain when ready to use.

  2. In sauce pan heat olive oil and add garlic (you could also add onions but they are banned in our house)
  3. Once browned add tomatoes and coconut milk.
  4. Add peas, rice and stock.  Bring to boil.  Season with salt and pepper.
  5. Simmer until most of the liquid has gone.
  6. Serve and enjoy!

Now I love this dish.  It always reminds my of the awesome trip I got to take to Guyana.  I say try this dish and you’ll love it too!
